Salad is not always exciting, or the star of the meal. But grilled romaine with an anchovy spiked, creamy dressing changes that misconception. Not only is this recipe shockingly easy to make, it has a sense of adventure. Especially great if you are preparing a meal to impress guests.

1 Tablespoon of extra virgin olive oil

2 heads of romaine lettuce, cleaned, any limp outer leaves removed, and sliced lengthwise

2 oz Caesar salad dressing, we love this homemade version

4 anchovy filets, such as Ortiz Gran Seleccion

Salt & pepper, as needed

…..

1 - heat up a grill pan or large skillet over medium heat. Add the olive oil.

2 - Working in batches, sear both sides of each romaine lettuce heart, until they start to brown and the leaves wilt slightly. About 3 minutes on each side.

3 - Arrange on a platter, drizzle with dressing and the anchovy filets, and season with salt and pepper.

4 - Serve immediately
