Furikake Eggs w/ Anchovies

<span>Furikake Eggs</span> w/ Anchovies

Serves 4

Active Time - 5 minutes. Total Time - 5 minutes
4 Small slices of bread, grilled and seasoned with olive oil & salt
1 Egg
1 Tablespoon olive oil
4 Anchovy fillets, such as Conservas Ortiz Gran Seleccion in Olive Oil, drained and chopped.
Salt, as needed
Furikake, to taste. We use Dark Horse Furikake
 



1 - Begin warming a small, non-stick skillet over low-medium heat. Add the olive and whole egg while the pan is slightly warmed.

2 - Season with a pinch of salt. Using a spatula, “scramble” the egg, until almost cooked. Should be creamy with no browned bits.

3 - Turn off the heat.

4 - Arrange the bread slices on your plate. Spoon equal amounts of the scrambled egg onto each slice.

5 - Sprinkle the furikake seasoning over the eggs, then lay a single anchovy on each slice.
